You can make a substitute sauce chili and garlic sauce by taking: 6 oz of spicy chilies (habanero, jalapeno, serano, long, etc. or a combination thereof), stemmed and chopped coarse (seeded if you prefer a little less heat) 4 garlic cloves, chopped coarse 1/2 tsp salt 1 1/2 tbsp sugar 1 1/2 tbsp white wine vinegar (or distilled white vinegar) Whirl it all up in a blender or food processor until only slightly chunky. Simmer gently for 5 minutes until the sauce no longer tastes “raw.” Add sugar or salt to taste.
