I don’t work for Starbucks, but drink an unusual amount of lattes – the amount of espresso depends on the size of the cup and your taste (you don’t use regular coffee in a latte) generally a tall has 1 shot, a grande 2, venti 2 (although I have found some places put 3 in a venti – like in Nova Scotia) – in all honesty I find Starbucks often heats the milk too much (it often gets a scorched taste) a good guideline (I learnt this from watching a show about professional baristas) is when the container is almost too hot to hold in your hand. Foam is a prefence to the drinker, I prefer just enough to cover the top of the cup. You also want to put the milk in as soon as it is heated (often at Starbucks they leave it sitting between customers and don’t steam more for the next customer), it should also be slowly poured in from a distance to the cup, rather than dumped in.
