Real balsamic vinegar isn’t made out of wine. A true balsamic is made only of sweet white Trebbiano grape pressings boiled and a vinegar starter added, then aged for years and years. The stuff you buy in most stores in the United States is a white vinegar that has been caramelized and flavored with a bunch of funky stuff. Look for the name aceto balsamico tradizionale and you’ll be sure to get the real stuff without extra additives and garbage. Get ready to pay 100 bucks+ however.
