Japanese noodle do not generally contain any egg products, soba is a buckwheat flour noodle, ramen is a thinner type, udon is a fatter wheat noodle, now some of the Chinese “Mein” noodles popular in Japan are egg based, I worked there, and shiritaki noodles can be wheat, rice or tofu based, rice noodles to are egg free, like the Thai and Vietnamese types, green bean and mung bean one to are not made with any egg products.
