Does Spinach Dip Taste Better with Mayo or Sour Cream… or both?
In dairy dips, I think the best dips are made out of a trio of buttermilk, cream cheese, mayo, or sour cream. I’m pretty sure I got the idea from one of the America’s Test Kitchen cookbooks, but ever since I started using at least three, I’ve never had a failed dip. The difference in taste depends on what trio you use. In the case of mayo (even miracle whip), you end up with a smoother mouth feel. Sour cream adds a sour kick, but lacks enough fat to create a decadent mouthfeel. Buttermilk adds acidity and sourness as well as a smooth mouth feel without adding alot of fat and is a great tool to thin a dip. Cream cheese mellows rough flavors like raw onion and creates a super creamy mouth feel.
