No, you can’t choose them. You can choose “Evolution cards” that have “Evolves from Eevee” written at the upper left with Eevee’s Signs of Evolution attack. Leafeon LV.X and Glaceon LV.X are “Pokemon LV.X cards” that are placed on top of Leafeon or Glaceon to Level Up.
