You should cut them back in the late fall early winter. It is probably ok to cut them back a little now, but I wouldn’t wait too long. I live in Virginia and we have a little longer winter than you do in Georgia, but I still think it’s safe to cut them back now, as the plant’s juices have not yet started to flow.
