With any meat, you have three ways to go, grill, bake or boil. Each affects meat differently. Grill: First, you use a high heat for a short time on each side to sear the surface to seal in moisture, then move to a lower heat to cook the middle, less results in RARE, more eventually results in well-done. I prefer somewhere in the middle. Bake: this is something like a roast which you put in an oven. Baking results in even cooking, but has no browning which grilling does. Yes, it browns eventually when baked, but by the time browning happens, the meat is well overdone and tougher. Boiling: This is where there is a lot of liquid which keeps the meat surface wet which cooks the meat, but does NOT brown the meat. Poaching is another form of boiling with only a small amount of liquid in a sealed container to hold in the steam in, as the cooking is done more with steaming than baking with dry hot air.
