Depending on where this root is grown, it can be bitter or sweet. You should always peel, wash and cook them to remove the toxins contained in the root. They contain poisonous cyanide toxins that cannot be effectively removed. However, since varieties vary it is always best to be safe to not eat raw and cook before eating. Cassava root is slightly higher in carbs than a potato and is also high in fiber and potassium. It is often prepared as a side dish or used in soups and stews, as it picks up the flavor of what is is cooked with. It’s commonly used to make tapioca as well. Be careful, and wash, peel and cook well. If you bought this at the market it is probably a safe variety. I’d use them.
