How do I know if my vehicles paint is single-stage or has a clearcoat?

It can be difficult to tell. One test is to take a coin or some object and lightly scratch the paint surface in an inconspicious area. Clearcoated finishes will yield a whiteish scratch, even if the paint is silver, black, blue, red or whatever. Of course this test works better the further the vehicle is from white.
