Normally, though, you would simply take button mushrooms, wipe them, dip them in a little beaten egg, then in seasoned breadcrumbs (preferably home-made, rather than the ghastly yellow ones you can buy), and fry (better deep fried, since they are more even) or bake in a little oil. BREADCRUMBS The best way to make fresh breadcrumbs is to use stale (but not dried out) bread and whiz it in a food processor until crumbly. A rolling pin would mash the bread flat. The crumbs should still be moist and light. It’s important to use stale bread – leaving a few slices out to air dry for a couple of hours works tolerably well. You can incorporate seasonings (salt, pepper, crushed garlic, a little cumin or coriander or dried herbs) when you blitz them in the processor.
