Ok for fresh mint sauce finely chop the mint and put it in a container,add small spoon of sugar and pour on a small amount of boiling water to dissolve the sugar. Next add vinegar – you can use malt, red wine or cider vinegar. I prefer the latter. It will keep for a couple of days in the fridge but is nicest used straight away. Now to store mint what I do is this: I finely chop freshly picked leaves ( I’m lucky I have a herb mill), then I put them in a container and freeze them. When I want mint sauce when there’s no mint in the winter I just take out a couple of spoons of frozen mint, put it in the sauce container, add sugar, boiling water etc. As above. I promise you it really works.
