Everyone has those Christmas recipes that have been passed down through their family tree. This is a recipe for Christmas Pudding that has been passed down in mY family. To make the crust, crumble the vanilla wafers in a pie pan or casserole dish. In a small bowl, mix the cold water with the gelatin and let stand. In a medium sized pot, mix the scalded milk with 1/2 c sugar and salt. Add the cornstarch and egg yolks to the milk mixture. Cook on low heat until it begins to bubble. Don’t scald it. Add gelatin mixture to the custard and let it cool. In a mixing bowl, beat the egg whites and add 1/2c sugar and cream of tartar. Stir vanilla into egg whites. Fold beaten egg whites into custard. Pour custard over crust. Let cool in refrigerator overnight. Whip cream and pour over custard. Sprinkle coconut over top.
