Not seeing the job, here’s a few suggestions. You could lay the new floor and then install new baseboard over the old ones if they high enough to cover them, then if there is a gap between the new baseboard and the wall depending how wide it is, use caulking or a fancy trim piece on the top. You could also just cut the old baseboard out with a sawsall flush with the existing floor, then install new floor and baseboards. You can also remove them by prying them away from the wall as far as you can then pry up on them and the nails should bend and pull out or the baseboard will split and then you can remove it. I have done jobs like this before, it’s a judgment call as far as what to do, I would decide when I saw it. All of the above is assuming you are going to try to keep the walls as they are. If you are gutting the walls, then rip out the baseboards when gutting the walls.
