How do I tell when a star fruit is ripe?
Star fruit is traditionally waxy and golden-yellow or green in color. When purchasing star fruit, make sure the skin is firm and shiny and that the color is even. Try not to purchase star fruit with rips that are already brown and shriveled. Star fruit ripens at room temperature after two or three days. You can also ripen unwashed star fruit by storing it in a refrigerator, wrapped in a plastic bag, for up to one week. Turn the star fruit often in order to get it to ripen evenly.
