Well- the rabbits are always held out to to Lennie as an incentive to keep going- much like one would hold out candy as an incentive to get a child to do something. Lennie loves the rabbits, but realistically can never care for them because eventually he kills the rabbit, George is like that rabbit because if he stays with Lennie he can never hope to stay in one job or build a life because Lennie always kills his chances.
