This makes the solution more alkaline or more basic. Changing the pH of water with baking soda is a simple “kitchen chemistry” experiment you can do at home. Pour some water in a glass. Add sodium bicarbonate — as much or as little as desired — with a spoon. Grate red cabbage leaves into the glass bowl. Pour some water into the saucepan and heat it to a boil. Turn off the stove and pour just enough boiling water into the glass bowl to cover the cabbage. Leave the glass bowl until it reaches room temperature. Filter the cabbage water through a strainer to remove the cabbage leaves. This “cabbage juice-water” will now serve as your pH indicator.
