Let it cool and then remove from the bone into small pieces. You can do this step ahead of time, let’s say on a Sunday afternoon and then put it all together quickly after work on Monday to save time. Just keep the chicken in the refrigerator until you are ready to use it. Put the chicken pieces in a casserole dish and mix it the Ro-Tel and both soups. Mix well. Place in the oven at 350 degrees for about 30 minutes. After 30 minutes in the oven add tortilla chips or flour tortillas cut into fourths on the top and then sprinkle with shredded cheese. Continue cooking in the oven until the cheese is melted.
