You won’t believe how much this egg free pound cake tastes like regular pound cake. Plus it is as easy to make as any cake recipe you have. Also, the kids can lick the spoon! Into a medium sized mixing bowl, sift together 1 5/8 cup plain flour (I like to use unbleached), 1 cup sugar, 1/2 teaspoon baking soda, 1 teaspoon baking powder. In another medium sized mixing bowl beat together: 1/2 tablespoon vinegar, 3/4 cup buttermilk, 1 1/2 teaspoon vanilla extract and 1 stick softened butter (1/2 cup). Prepare a loaf pan by greasing it with butter and coating it with flour. Preheat the oven to 325*. Add the dry ingredients to the wet ingredients and beat the mixture until completely smooth and fluffy, about 4 minutes. Pour batter into the prepared loaf pan. Bake at 325* for about 45 minutes until a toothpick comes out clean when inserted into the center. Let cool slightly in pan before removing cake from pan. Cool completely before cutting.
