How Do You Bake Quick & Easy Sweet Potato Pie?
When I was a kid growing up I absolutely LOVED my Great Grandma’s Sweet Potato Pie! Talk about rich, creamy, and delicious! Well, my Granny has since passed, and I can never seem to exactly replicate her sweet potato pie recipe. But, I have learned to take a few shortcuts & the result has turned out surprisingly GOOD! Check it out…. Empty the contents of either the Country Crock or Jim Evans refrigerated and whipped sweet potatoes into a large bowl. Then turn on your oven to 325 degrees. (I cook pies a bit slowly because I’m not always so good about checking in on them, oh I can cook–but baking is a challenge, and this way, the crust won’t burn if I let it go a little long) Add 1/2 cup of brown sugar, 1/2 cup of white sugar, a pinch of nutmeg, and ground cloves, 1 tablespoon of vanilla, 1 tablespoon of sweetened condensed milk, 1 small egg, and 1 tablespoon of Captain Morgan’s Spiced Rum (Heeeee…it’s liquor pie!
