Usually I use Diversey Break-Up Professional Oven & Grill Cleaner. I found out about it on https://www.cookwared.com/reviews/best-oven-cleaner/. I should say, I’m very pleased with it. I can clean not only my oven, but also a grill, ventilating hood and griddles. Maybe it is pretty expensive (about $32 on Amazon), but it really works and eases the process of cleaning.

Convection ovens are essential to provide truly even oven temperatures. These consistent temperatures are very important if you are cooking sensitive foods like soufflés, cakes and popovers. Cleaning a convection oven is similar to cleaning a normal oven. Verify the oven is turned off and the inside components are cool enough to touch. Remove the racks from your convection oven and set them aside. Spray the oven interior with oven cleaner. Spray all surfaces including the coils, sides, top, bottom, and inside of the door. Follow the directions on the specific oven cleaner you choose as to how long it should be left to set. Wipe away the oven cleaner using an old rag. Use warm soapy water to clean the racks off and then put them back in the oven. Clean the outside of the oven with a damp towel.
