A convection roaster is no different than a regular oven except that it is much smaller and it cooks just a bit faster than a regular sized oven. Pre-heat it to 350 degrees F for at least 30 minutes before cooking. Cut up your onions and carrots and put them into the bottom of a roasting pan. Before setting your beef roast inside of the pan, be sure to season the entire roast sparingly. Use extra salt if you want it to have a better taste. The roast will not be salty at all, as most of the salt cooks off. Place your seasoned beef roast in the middle of the pan directly on top of the vegetables. Season the vegetables with salt and pepper as well. Add one cup of water to the pan. Cover with tin foil tightly and place into the convection oven for two hours. Do not open the oven or open the foil on the pan. Remove the roast from the convection oven and allow it to sit for approximately 30 minutes so that the juices can redistribute throughout the roast.
