About 20 minutes to a half-hour before cooking, take the steak out of the fridge and let it come to room temperature. While you’re waiting, preheat the oven to 450 degrees. To cook on top of the stove, heat a heavy frying pan with a little olive oil until the oil starts to shimmer. Season the steak on both sides with salt, pepper and garlic powder. Put it in the pan and don’t move it around. Let it stay until the steak starts to brown well. (Adjust the heat, if it’s getting too brown.) When the meat is browned well on one side, flip it over. Put the pan and meat into a 450 degree oven for 5 minutes. Test for doneness by touching the steak and then pressing your hand at the base of your thumb. They should feel similar. The firmer the meat, the more well done it is. Remove the meat from the pan to a plate and let it rest for 8 to 10 minutes. Remember, you can always cook it more but you can’t uncook it.
