How to make a Spanish Onion Omelet. Everyone loves omelets for breakfast or even for the occasional dinner. There is nothing like having a great recipe on hand when the urge for an omelet hits you. Now you can have one whenever you like. Peel and thinly slice 1 medium sweet Spanish onion. Separate into rings. Melt 1/4 cup butter in skillet. Add onion rings and cook over low heat until tender. Stir in 1/4 cup sour cream, salt, and pepper to taste. Keep warm. Beat 6 large eggs with 2 tablespoons water and 1/2 teaspoon salt. Heat a 10 to 12 inch skillet. Add 1 tablespoon butter, tilting pan to coat sides and bottom. When bubbling, add egg mixture. Cook until set on bottom, lifting sides to allow uncooked portion to run underneath.
