This is such a quick way to do potatoes and you can put them right in the oven with your roast and save energy that way. You will be having the potatoes be in single layer in your baking dish. You will not need a lid for the baking dish. Peel the potatoes and slice in 8 pieces so they cook quickly. Put the sliced, peeled potatoes in the baking dish and coat with the olive oil. Turn them with a spatula or flipper and make sure the olive oil is coated well on the peeled potatoes.
