These delicious high protein pancakes are incredibly easy to make and continue to grace our table every Saturday morning. The key flavor comes from the cottage cheese and they come out thin — more like a Swedish pancake than the fluffy buttermilk variety. The recipe comes from my mother-in-law’s 1972 Mennonite cookbook and while there are newer editions of the cookbook out there, I haven’t been able to find this recipe in any of them. Heat a skillet to medium high heat. In a large bowl, mix cottage cheese, eggs, flour, salt, oil, milk, and vanilla. Whisk ingredients together until desired consistency Coat skillet with oil or butter and drop batter by the quarter cup onto the hot skillet. Cook for a few minutes, checking the underside. Flip when browned and continue to cook on the other side until lightly browned Serve with maple syrup, yogurt, or fresh fruit. Enjoy!
