After you try this super easy macaroni, cheese and tomato dish, you’ll never have to make a sauce or turn on the oven again! Bring a pot of water to the boil. Drop whole, washed tomatoes into the water as soon as you turn on the heat. The idea is to scald the tomatoes so that skins will come off easily. Think one tomato per serving. When water boils, remove tomatoes with slotted spoon and drop into bowl of cold water. Add macaroni to pot and boil until as soft as desired, usually between 9 and 11 minutes. Remove tomatoes from cold water. Skin of tomatoes will peel off easily. Chop into bowl. Grate or chop cheddar cheese into same bowl. No sense dirtying more dishes than necessary. Cheese amount can be more or less, depending on taste, but usually about one to one and a half ounces per serving. When macaroni is cooked, drain and return to same pan. Add bowl of tomatoes and cheese. Add onion salt to taste. Voila! Instant supper!
