Rinse them really well under cool running water. Rub them between your hands to get all the ‘stuff’ off. Then dry them a bit in paper towels or a dish towel. Dry over night in the open air. Nest day line a cookie sheet with foil. Preheat oven to 250°. Toss your seeds with a tiny bit of oil and some spices (salt, onion powder, garlic, paprika, cayenne, whatever you like) Toast for about 1 hour in the oven till toasty and slightly brown. Let cool and store them in an air-tight container. If you want them really salty you can brine them the first day and then dry like usual.
