When most people think about cooking a roast, they imagine it in a pan surrounded by carrots and potatoes. This is an excellent tasting dish but can often times take a long time to cook. I have found another way to cook my roast. I cook sliced roast beef in my crock pot. It gives the dish enormous flavor, and by adding come egg noodles and carrots, I have a whole meal all in one dish. Here is how I do it. Buy a 1/2 to 3/4 of a pound of sliced roast beef at your local grocery store. Cut the sliced in to bite-sized pieces and set aside. Gather your other ingredients, which you probably already have at home, and lay them out on your counter. That makes it easier to assemble and cuts down on preparation time. Turn your crock pot on high and add the beef broth, sour cream and egg noodles. Let them cook for about 15 minutes. Add your roast beef slices, cooked carrots, salt and pepper.
