A rib roast is an expensive piece of meat, so buying a good cut of beef and following the right recipe is critical to a successful dinner. Buy a good roast! Ask your butcher to cut your roast from the loin end or the first cut of the rib section. This will be a leaner cut and give you more meat for the dollar. Allow the roast to reach room temperature prior to cooking. This is an important step in the process. Usually an hour or two is sufficient. Preheat your oven to 375 degrees. Apply your rub of 1/2 Tablespoon Salt, 1/4 Tablespoon Pepper and 1/4 tablespoon garlic salt. Some folks suggest not using salt, but it makes a great crust on the outside of the roast and with this slow roasting method, it works and tastes great.
