Roasting vegetables in the oven is an easy way to prepare a healthy side dish for dinner. Cooking vegetables in this manner lends a whole different flavor to vegetables you may be used to steaming or boiling, and they make a fine accompaniment to meat, poultry or fish. Several vegetables are especially well-suited to roasting, including potatoes, cauliflower, parsnips and squash. Have fun and experiment with cooking different vegetables by using different spices and seasonings. Preheat your oven to 425 degrees F. Wash your vegetables with cool water and a scrub brush. Peel vegetables such as carrots, eggplant or potatoes if necessary. Chop your vegetables into small pieces using a sharp knife. Each piece should be roughly the same size so the vegetables cook evenly. Place your chopped veggies in a medium-sized bowl and drizzle with 1 tbsp. of olive oil for every cup of vegetables.
