Infrared heating elements in grills and cooking stoves heat up quickly and stay hot to quickly turn out large quantities of evenly cooked food. People who love the flavor of grilled food, but want to avoid hours of standing in front of the grill can get the job done in about half the time using infrared heat. The intense infrared heat develops a quick sear on the surface of foods to seal in moisture so they stay tender. Scrape the grates over the infrared heating element with a sturdy wire brush to remove any burnt on debris or food residue. Fold a paper towel in half four times and pour a few drops of vegetable oil in the center of the folded towel. Pinch the oiled paper towel with metal tongs and rub the oil onto the grates.
