Garlic is a member of the Lilly family, along with onions and shallots. What we call garlic cloves are actually bulbs. These are connected at the root forming what is called the garlic head. Each bulb is covered with its own skin and the entire head is enclosed in an outer skin. Use your thumbs to break off as many cloves as you need from the head of the garlic. Place the garlic cloves on a cutting board, and then use a sharp knife to cut the ends off of each glove. Depending on the size of your garlic cloves, you want to take approximately 1/4 inch off each end. Use the flat part of the blade of your knife to gently but firmly push down on each of the garlic cloves. When you push down on the clove, the skin pops off. Remove and discard the garlic ends and skins. Chop the garlic into small pieces, or dice it.
