Mangoes are delicious fruits. They are good alone or made into salsa or fruit salads or added to smoothies. However, they can be hard to cut because they are slippery and slimy. It helps to begin with a mango that is perfectly ripe. If the mango is too ripe, it will be too mushy to slice. If the mango is not ripe, it will be too hard to cut. The perfect mango is firm but soft. Mangoes have flat sides that run along the oblong pit. Slice off each flat side of the mango lengthwise leaving the “core” with the large seed. You will have two halves plus a fleshy core. Take a half of mango in your hand. Without cutting the skin, slice the flesh into strips or cubes. Use a spoon or a paring knife to scoop out the slices or cubes. Now take the core. Pare the skin, dice the remaining flesh, and add with the rest of the mango.
