Go slow because the outer skin is very tough and you don’t want to cut yourself by accident. Now take a spoon and scoop out the seeds and flesh strands. Take your glass baking dish and lightly drizzle with olive oil. Place your butternut squash halves flesh-side down in the dish. Make sure to move each halve around in the oil so it’s nicely coated. Grab each half and place flesh-side up on a cutting board. Sprinkle lightly with salt and pepper. Replace the halves, flesh-side down in baking dish. Pop into the oven and roast for 45 minutes. Let the butternut squash cool completely before proceeding. With your fingers, peel the tough outer skin from the butternut squash. Now you have a cooked butternut squash! Eat alone or toss into your favorite tomato sauce or curry sauce. You can even puree it for baby food.
