Thanksgiving is just around the corner and it’s time to prepare the menu. Almost everyone has their favorite recipe for stuffing and here is one of mine. It is very easy to make and I have found that the sausage complements the turkey surprisingly well. Chop the celery and chestnuts into small pieces. Sauté with 1 pat of butter and set aside. Boil 8 cups of water and salt to taste. Add 1 tbsp of olive oil and 1/2 stick of butter for taste. Add your stuffing mix and blend. Set aside. At this point, I use Stove top stuffing mix, but you can use any brand or make your own. Next, strip the casing off of the sausage and brown in a skillet. If you prefer the sausage with the casing, slice the links into 1/2 inch rounds before you brown them. Drain the sausage and let them rest on a paper towel while you blend the other ingredients. Add the stuffing, celery, chestnuts, and remaining butter to a large bowl and blend well. Add the sausage and mix evenly, then salt and pepper to taste. Spread th
