There is an art to fry the perfect egg omelet. Timing and balance are involved, along with cheese and milk. First crack and beat three eggs in a bowl and chop up the green onion stalks or tops and mix them in. Also mix the black pepper to taste and a pinch of salt into the eggs. Add a little milk to the mixture of eggs, not a lot maybe a two second count pour. Next the skillet to high medium heat. Melt a dab of butter in your skillet. Then toss three beaten eggs in the skillet. Let the eggs start cooking. After a while add the handful of cheese on top of the eggs. This has one bad side effect on our omelet of eggs. The cheese has oil or grease or whatever in it and will make the top of our omelet juicy. Do not let that confuse you and make you burn the eggs. We do not want our omelet eggs burnt.
