The peel of an orange, also called the zest, is used in many cooking and baking recipes to add a tangy orange taste food. The oils in the peel are what give it such an aromatic flavor. Often a recipe will call for orange zest when referring to spice or flavoring. Only grate the colored part of the orange and not the pith, or white skin underneath, as that part has a bitter taste to it. Lay a piece of wax paper on a clean surface and place a bowl on top of the wax paper. The bowl is to collect the grated orange peel (or zest) and any pieces that don’t make it into the bowl will land on the wax paper. You can then add those pieces into the bowl. Hold the grater over the bowl and begin scraping the outer edge of the orange against the smaller holes of the grater. Be sure to rub in the direction opposite of the holes.
