Dragon fruit, known botanically as Hylocereus, is a genus of subtropical flowering and fruiting succulents also commonly known as strawberry pear or pitaya. According to the University of California Davis, dragon fruit is native to the tropical areas of Mexico and northern South America and there are at least 25 named species. Dragon fruit can vary in skin and flesh color, is oval in form and has triangular-winged scales that resemble the spines down a dragon’s back. They have a large number of seeds embedded in the flesh that are similar in size to strawberry or kiwi seeds. They are slow to mature when planted by seed and can take up to seven years to become fruit bearing. Harvest mature seeds from ripe fruit by scooping out the interior flesh into a very fine mesh strainer.
