How do you keep chocolate melted without it hardening or drying out while making Christmas treats?

When working with melted chocolate you need to work quickly and make sure no water gets in. If your melting over a double boiler and or in a bowl over hot water and any water gets in the chocolate it will seize. Try to use a tight fitting bowl or saucepan so the steam can’t escape. I don’t add anything to my melted chocolate but just try and work quickly and only melt small quantities at a time.
