In a large bowl, combine 2 tablespoons of extra virgin olive oil, 1 tablespoon of fresh lemon juice, 1 tablespoon fresh chopped rosemary, 3 cloves of garlic minced, and 3 tablespoons Dijon mustard. Add 1/2 teaspoon each of salt and ground black pepper to taste. Take 4 chicken breasts (about 2 pounds) and remove the skin from each. Once you have skinless chicken breasts, add them to the bowl with the mustard and other ingredients and mix around well. Once the chicken is coated well, place the bowl in the refrigerator for a few hours to allow the marinade to soak in to the chicken breasts. Next, you can either grill the chicken, or bake it in the oven. If baking, preheat the oven to 450 degrees. Use cooking spray to coat a baking pan and roast for about 20-25 minutes or
