Although I am not a very big fan of fudge, I usually find it too heavy or too rich, I’ve used my Mom’s delicious and easY recipe for Peanut butter fudge and have found myself going back for seconds. Grease a 9-by-13-inch baking pan and set aside for later. Take a medium-large saucepan and place it over medium heat, combine white sugar, light brown sugar, butter and evaporated milk in the sauce pan. Bring the mixture to a boil, stirring constantly. Continue to cook at a boil for 7 minutes. Remove from sauce pan from the heat and stir in the marshmallow cream until it is completely melted and incorporated. Combine the peanut butter and vanilla intil smooth and creamy. Pour the mixture into avgreased pan and spread out evenly using a spoon. Let cool. Allow it to completely cool, about 4 hours, before cutting into squares to serve.
