I hope you did not stop reading at the word tofu. This recipe uses marinated tofu and I have so far found nobody, vegetarians and meat-eaters alike, that have not found the dish tasty. If you make your rice in the morning and prepare your tofu at the same time, the meal can be put together in under 20 minutes. To cook your tofu, remove it from the freezer, and, still in it’s plastic wrapper, put it into a large pot of boiling water. Remove from heat and set aside to defrost for 10 minutes. When the 10 minutes is up, remove the tofu, unwrap it and cut the slab in half longways. Place each part on a folded kitchen towel. Place another folded towel on top of the tofu and weight it with several heavy books. You are trying to remove as much moisture as you can from the tofu so weight it well and leave it for 30 minutes. This preparation takes a bit of time but is well worth it. After 30 minutes, remove the towels and cut the tofu into small cubes. Marinate the tofu in the spicy peanut satay
