If you love Quiche Lorraine, but want a version that is lower in fat and calories that the original, try this one! It’s delicious! Preheat over to 350 degrees fahrenheit. Cook rice as directed on package. Use 1/2 cup rice and 1 cup water to make approximately 1 1/2 cups of cooked rice. Spray pie plate with Pam. While rice is hot (or at least warm), mix the rice and the egg white together, then press into the bottom and up the sides of the pie plate (I use a piece of waxed paper to do this). If desired, sprinkle a touch of onion power on top. Bake the crust for 5 minutes. Stir together all other ingredients except the bacon. Sprinkle the crumbled bacon into the cooked crust, then pour the milk mixture over top. Bake at 350 degrees for 25-30+ minutes, until a knife inserted into the center comes out clean. Run a knife around the edge of the dish immediately, then let stand for 10 minutes before cutting.
