My omelettes are always fluffy.I simply beat the eggs first really good with a fork or whisk.Then I add in a teaspoon of water to a couple of eggs and beat it again.This always works for me.Cook over a low heat and they will be really fluffy and tastey.I use oleo or butter in my pan and a little salt/pepper to taste.
