Ingredients 2 cups cooked brown rice 3 Tablespoons good grade virgin olive oil 1 cup chopped fresh mint leaves. 1 cup chopped fresh parsley leaves, flat leaf variety, if possible 1 cucumber peeled and thinly sliced 5 green onions, white and green part, thinly sliced Juice of 1 large or 2 small lemon 1/8 teaspoon white pepper, if you have it, if not use black pepper 3/4 teaspoon salt preferably sea salt Combine ingredients in a large bowl, mix well, cover, and chill in the refrigerator 1 to 6 hours to allow the flavors to blend. Serve over a bed of crisp salad greens. A ruffled leaf green variety of lettuce is nice. So is Boston lettuce. A dark leafed Romaine generally makes an excellent foundation match for this blend of flavors.
