Getting bored of eating your fried eggs the same way? Try a greek-style fried egg for more flavor and a few health benefits, too! Toast your bread and place it in the bottom of your bowl. Select your pan. It should be on the small side, just large enough to hold one egg at a time. (Mine is an 8-inch frying pan and still a little big.) Turn your burner to high, add enough extra virgin olive oil (1/4 cup or so)to coat the bottom of the pan and get the oil to sizzle stage. (It might take over a minute if you have an older electric range; less if you have a fast gas stove.) Break the egg into the oil, being careful not to splash oil onto the burners. Since you’re basically deep frying the egg, it should sizzle and bubble when you put it in. Salt and pepper to taste while cooking. Flip the egg as soon as you can with your egg turner / spatula. Cook to desired doneness. A runny yolk seems to taste best, but I’ll often break the yolk as soon as I put it into the oil. Pour all contents of pan
