• In a mixing bowl, beat together the butter and sugar. • Add the creamed coconut (if it is solid, you will need to soak it in boiling water whilst still packaged) • Use a blender will be quicker • Add the carob or cocao powder ad honey • Add as much oats and dried fruit as you want! • Make sure it is quite a thick consistancy other wise it won’t work, If it is too thin add some thickening agent, flour or more oats. • Line a baking tin with clingfilm and pour the mixture in the tin, spreading it evenly. • Add a topping if desired • Place in the freezer for 1-2 hours • Remove from freezer, slice into squares with a knife. Eat immediately for a refreshing tropical treat, or leave in the fridge to eat later!
