The thawed, frozen spinach is optional, but it will give this dip an even more healthful boost from the dark greens. Give the child the lemon to roll on the counter. This will break up the membranes inside and make juicing easier. Combine the buttermilk, mayonnaise, sour cream and salsa in the bowl. Cut the lemon in half and squeeze the juice out of it into the bowl. Stir this into the dip mixture. Add the carrots, cucumbers and spinach to the dip and stir to combine. Sprinkle the chopped dill over the dip, cover the dip with plastic wrap and refrigerate for at least two hours to thicken. Serve with sliced vegetables.
