Cut the sausage into half-inch-thick slices. Set both meats aside. Heat one cup of cooking oil over medium-high heat. Whisk in the flour. Stir the mixture for a few minutes until the flour is incorporated. Stir 2 cups of celery, 2 cups of onion and 1 cup of bell pepper into the hot oil. Stir the vegetables until they begin to wilt. Add the hen and sausage into the gumbo, being careful of spray from the oil. Stir the mixture of hen, sausage and vegetables. Cook for about 15 minutes.
